This champagne vinaigrette is a light, elegant salad dressing made with champagne vinegar, olive oil, Dijon mustard, and a touch of honey. Milder than traditional vinaigrettes, champagne vinaigrette has a soft acidity that pairs beautifully with delicate greens, spring salads, and grain-based salads without overpowering them. If you’re looking for a simple homemade dressing that tastes restaurant-quality but takes just minutes to make, this champagne vinaigrette is an easy go-to.
This is the kind of dressing I reach for when I want the salad itself to be the star. It’s subtle, balanced, and fresh, adding just enough tang without the sharp bite you get from stronger vinegars. I especially love it on tender greens, shaved vegetables, fruit-forward salads, or simple grain bowls when I want something lighter than a classic balsamic or red wine vinaigrette.
Champagne Vinaigrette Recipe
Makes about ½ cup
Ingredients
3 tablespoons champagne vinegar
⅓ cup extra-virgin olive oil
1 teaspoon Dijon mustard
1 teaspoon honey (or maple syrup)
1 small shallot, very finely minced (optional)
¼ teaspoon salt
Freshly ground black pepper, to taste
Instructions
In a small bowl or jar, whisk together the champagne vinegar, Dijon mustard, honey, salt, and black pepper.
Slowly drizzle in the olive oil while whisking until the dressing emulsifies.
Stir in the minced shallot, if using.
Taste and adjust seasoning as needed.
