A good homemade Italian dressing should be bold, balanced, and bright - not overly tangy, greasy, or flat. This easy Italian dressing comes together in minutes using pantry staples and delivers that classic, restaurant-style flavor without any mayo or fillers. It’s perfect for green salads, pasta salads, grilled vegetables, and meal prep bowls, and below I’ll include exactly what I used.
I especially love using this dressing in my favorite easy high-protein pasta salad, which I’ll link right here: Easy High-Protein Italian Pasta Salad (Perfect for Meal Prep)
Ingredients
Serves: 12 (about 1 tablespoon per serving). Makes about ¾ cup total.
Time: Prep 5 minutes | Total 5 minutes
½ cup extra-virgin olive oil
2½ tablespoons white wine vinegar
1 teaspoon sugar
1 teaspoon Italian seasoning
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon dried oregano
2 tablespoons grated Parmesan cheese
Instructions
Add all ingredients to a small jar or bowl.
Whisk or shake vigorously until the dressing is fully combined and lightly emulsified.
Let sit for 10–15 minutes before using to allow the flavors to meld.
Taste and adjust salt or sweetness if needed.
Storage
Store this Italian dressing in an airtight container or jar in the refrigerator for up to 5–7 days. Shake or whisk before using, as natural separation is normal.
