Dijon Balsamic Dressing (Simple Homemade Vinaigrette)

This Dijon balsamic dressing is a smooth, well-balanced vinaigrette made with olive oil, Dijon mustard, and just a touch of balsamic vinegar for gentle acidity. Compared to a classic balsamic dressing, this version is milder and more olive-oil-forward, creating a softer, smoother flavor that lets the salad ingredients shine instead of overpowering them. It works especially well on steak salads, simple greens, and hearty vegetable salads. This is an easy, everyday homemade dressing that comes together in minutes, and below I’m sharing exactly what I used.

How to Make Dijon Balsamic Dressing

  1. Combine base ingredients

    In a small bowl or jar, whisk together balsamic vinegar, Dijon mustard, honey, salt, and black pepper.

  2. Emulsify

    Slowly whisk in the olive oil until the dressing is smooth and fully emulsified.

  3. Taste and adjust

    Adjust sweetness or salt as needed. Add a splash more olive oil if you prefer an even milder dressing.


How to Use This Dressing

  • Drizzle over steak salads or chicken salads

  • Toss with romaine or mixed greens

  • Spoon over roasted vegetables

  • Use as a light dressing for bean or lentil salads


Storage

Store in a sealed jar in the refrigerator for up to 5 days. Let sit at room temperature for a few minutes and shake well before using.
